Protein Energy Bites

I love baking sweets, but recently I have been trying to more aware of what I am putting into my body. I decided to try out some healthier recipes packed with protein. Today, I focused on making some peanut butter energy bites and I came up with this recipe. These protein balls are perfect for when you’re on the go and need a little fuel!

INGREDIENTS:

  • 3/4 cup oatmeal
  • 1 cup creamy peanut butter
  • 1/4 cup flaxseed
  • 1/2 cup chocolate chips
  • 1/3 cup honey
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 scoop protein powder

STEP ONE: Mix the creamy peanut butter with the oatmeal until they are well mixed. Use a medium setting on your mixture for the ingredients.

STEP TWO: Mix in the protein powder.

STEP THREE: Mix in the honey. This will help the other ingredients stick together.

STEP FOUR: Now for the chia seeds!

STEP FIVE: Mix in the vanilla. I tend to just pour my vanilla straight from the bottle. I believe that you can never have too much vanilla when baking or making sweets.

STEP SIX: Add the flax seeds.

STEP SEVEN: Gently mix in the chocolate chips by hand or on the lowest setting on your mixer. We don’t want to break apart the chocolate chips.

STEP EIGHT: Cover the mixture and refrigerate for at least a half hour. Once the mixture has firmed up a bit, it will be easier to separate and handle.

STEP NINE: Roll the dough into 1″ round balls. If you want to add a little more chocolate, feel free to coat the balls in almond bark. I decided to keep them uncoated for a healthier option. Store the balls in an airtight container in the refrigerator.
